Step 1:
How to make Pepperoni Pizza at home? First, prepare the ingredients for the dough.
Step 2:
In warm water heated to 37-40°C dissolve the sugar. And then pour in the yeast and leave for 15 minutes until a fluffy cap appears. If the caps have not appeared, then either the yeast is spoiled, or the water has overheated and the dough will not rise. It needs to be kneaded again.
Step 3:
Sift flour into a bowl. Add salt. Mix everything and make a recess in the center of the flour.
Step 4:
Pour the activated yeast and olive oil into it.
Step 5:
Knead the elastic homogeneous dough. Knead for about 7-10 minutes, until the dough begins to come off from the hands. Cover the bowl with a towel and leave the dough in the heat for 45 minutes to rise.
Step 6:
While the dough is rising, prepare the sauce. Ketchup is better to take a barbecue or another, with a slight edge. If you do not have a ready-made mixture of Provencal herbs, you can assemble one yourself from dried thyme, rosemary and basil. Take medium-sized tomatoes, ripe, juicy and fragrant.
Step 7:
Wash the tomatoes, make criss-cross incisions. Pour boiling water and leave for 1 minute. Then remove the skin from them.
Step 8:
Cut the pulp into slices, removing the inside of the stalk.
Step 9:
Combine tomatoes, ketchup, garlic cloves, Provencal herbs and spices in a blender bowl. Whisk everything until smooth.
Step 10:
Heat vegetable oil in a frying pan over medium heat. Pour out the whipped tomato mixture, add tomato paste. Stir and simmer, stirring, for about 5 minutes until the liquid evaporates and thickens.
Step 11:
Remove the finished sauce from the heat and cool.
Step 12:
Now prepare the filling. Pizza got its name thanks to the sausage of the same name, to which hot chili pepper is added. Therefore, it is better to use it for pizza. Chorizo will be suitable as a replacement.
Step 13:
Cut the sausage into thin slices. My sausage was already sliced.
Step 14:
Grate the mozzarella on a coarse grater. I use a special semi-hard mozzarella cheese for pizza (not to be confused with soft mozzarella cheese in balls, although it can also be used like any other delicious and high-quality cheese).
Step 15:
Knead the dough and roll out into a thin round cake with a diameter of about 30 cm.
Step 16:
Transfer the tortilla to a parchment-lined baking sheet. This should be done immediately, before you lay out the filling, then it will be more difficult to do it, and under the weight of the filling, the dough can stretch and lose shape. I roll it out first on the table, then immediately transfer it to parchment, and the parchment with the base to a baking sheet.
Step 17:
Brush the dough liberally with spicy tomato sauce.
Step 18:
Sprinkle grated cheese on top.

Spread the pepperoni circles evenly on top. Bake the pizza in preheated to 250°In the oven for 8-10 minutes. The exact time depends on your oven. If it is possible to turn on the "top+bottom+convection" mode, use it. Bon appetit!
