  • As an alternative to the various ready-made sandwich spreads, here's a farmer's cheese spread with fresh herbs. It takes just 10 minutes to make, and thanks to the mayonnaise in it, it keeps in the fridge for up to three days. You can make the appetizer with farmer's cheese of any fat content. Use fresh, non-sour cheese - homemade is best, but if you don't have that, any kind will do, even fat-free. The main thing is that it's moderately drained but not too dry. If the cheese is lumpy, it's better to blend it. Wash the fresh herbs - we're using green onion, parsley, and dill - in cold water, shake them off, and chop them finely. Add the chopped herbs to the cheese. Next, grate the hard cheese on a fine grater. It's best to use a saltier cheese, in which case you won't need to salt the appetizer. Add the grated cheese to the farmer's cheese as well. Stir in the mayonnaise and, if you like, a pinch of salt. If you don't want to use mayonnaise, swap it for sour cream - just don't store that version for long, and you won't be able to anyway: it's so delicious it gets eaten right away. Now take a fork and mash everything together well into a smooth spread. If you like, you can blend it all together, but if the cheese is soft and smooth, a fork is enough. The farmer's cheese and herb spread is ready - spread it on slices of bread and serve the sandwiches right away.
