Napa Cabbage, Bell Pepper, and Tomato Salad
Fresh, juicy, light, healthy, no mayonnaise! Napa cabbage, bell pepper, and tomato salad is a quick, simple vegetable salad recipe that you can serve as a dish on its own or as a side to other dishes. It's low in calories and works well for anyone watching their diet.

Step 1:
How do you make a salad of napa cabbage, bell pepper, and tomato? Gather the ingredients. Choose a smaller head of cabbage if you can; if it's large, use the upper green parts of the leaves - they taste better. Instead of regular tomatoes, you can use a few cherry tomatoes. Any herbs you like or have on hand will do. Use pitted olives.

Step 2:
Remove the top leaves from the cabbage. Cut off the amount you need either straight from the head or by tearing off a few leaves. You can cut the cabbage however you like - into strips, as I did, or into squares. You can also tear the cabbage by hand, the way you usually do with lettuce.

Wash and dry the pepper. Cut it open and remove the seedy core. Cut the pepper into strips. Or into other shapes, whatever you prefer. I used a yellow pepper, but any color will do - red or green.

Wash the tomatoes and cut them into small pieces. Cherry tomatoes just need to be cut in half.

Take the olives out of the brine and pat them dry a little. Cut each olive in half. If your olives have pits, remove them by crushing each olive with the bottom of a glass.

Rinse and dry the herbs well. Pull the leaves off the coarse stems. Chop them finely with a sharp knife.

Make the salad dressing. How do you make the dressing? Pour olive oil into a small bowl. Instead of olive oil, you can use any vegetable oil you like. Pour in a little lemon juice. I'd recommend adding it carefully - lemons vary in acidity, and not everyone likes a very tart dressing. Add salt and pepper. Stir the dressing with a spoon and taste it, adding whatever it's missing if needed.

Take a plate and put the cabbage on the bottom. Put the cut bell pepper, tomatoes, olives, and herbs on top. Pour the dressing over the salad and serve right away. If it sits, this salad can release too much juice. So if you're making it ahead, dress it just before serving. Enjoy!
- A very pleasant, light salad. You can add fresh cucumber and red onion to taste.
- The salad looks neat and pretty if you cut all the ingredients into pieces of the same size and shape (cubes, for example).
- How do you choose good olives? It's better to buy them in clear packaging so you can see what they look like and their color. If the olives are too black, food dyes have been added. The olives should be firm, whole, with smooth, glossy skin. Olives that are too soft and overripe won't keep long.
- Since everyone's tolerance for salt, sweetness, bitterness, heat, acidity, and spice is different, always add spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some are especially easy to overdo (chili pepper, for example).
