Carrot, Apple, and Cheese Salad

A very quick, easy, and tasty salad! This salad of carrot, apple, and hard cheese comes together in literally a few minutes. But despite how simple and fast it is, it turns out very tasty and healthy. Its zesty flavor is a great complement to a lunch or dinner of hot and meat dishes. If you like, you can tweak the ingredients to taste — for example, leave out the garlic so the salad isn't sharp.

    You can use any hard cheese you like, but it's best to avoid varieties with a bold, strong, distinctive flavor that would overpower the other ingredients. Grate the hard cheese on a coarse grater.

If you're not a garlic fan or have an important meeting ahead, you can leave the garlic out entirely — the salad just won't have that zesty garlic note.     Firm, sweet-and-sour apple varieties are best for this salad. Wash the apples thoroughly, peel them if the skin is tough, and cut out the seedy core. Grate the flesh or cut it into thin sticks.
