Lamb and Cabbage Soup with Sautéed Vegetables

Want an easy, quick, hearty soup made with lamb and fresh green cabbage that everyone will love? Start by gathering all your ingredients and spices for this rich, meaty vegetable soup.

To make the rich cabbage soup, pour 2 liters (about 8 cups) of cold water into a suitable pot. Add 600 g (about 1.3 lb) of bone-in lamb cut into pieces and a chunk of onion, cover the pot, set it on the stove, and bring to a boil over high heat.

Finely chop one onion and add it to a skillet set over high heat with 2 tablespoons of vegetable oil. Stir and sauté until translucent.

Coarsely grate one medium carrot, add it to the skillet with the onion, and stir-fry the vegetables over high heat.

Cut two bell peppers (any colors you like) into strips and add them to the skillet. Stir and sauté the vegetables over high heat.

Dice one tomato into small pieces and add it to the skillet. Stir the vegetables together and keep sautéing over high heat.

Add two cloves of pressed garlic, 1/2 teaspoon khmeli-suneli, 1/3 teaspoon ground coriander, and spicy adjika to taste. Stir everything together and simmer the vegetables for 2 minutes. (Adjika is a spicy Georgian pepper-and-garlic paste; a little hot sauce or harissa makes a good stand-in.)

Add dried herbs to taste and a bay leaf, stir everything together, and turn off the heat.

Cut 200 g of green cabbage into strips.

Skim the foam off the meat broth as it comes to a boil, then cover the pot and continue cooking the lamb for 1 hour over medium heat.

Peel and dice 3 potatoes into small pieces. Once the hour is up, add them to the pot and bring the broth back to a boil over high heat.

Add the sliced cabbage to the pot, cover it, and bring back to a boil over high heat.

Season the pot with salt to taste, then stir in the sautéed vegetable base from the skillet and mix everything together.

Cover the pot and continue cooking the soup for 15 to 20 minutes over low heat, until done.

Ladle the homemade cabbage soup into bowls and serve with sour cream, to taste.
