Creamy Mushroom and Vegetable Soup

Peel and dice 4 to 5 potatoes into small pieces, put them in a suitable pot, and pour in 1 liter (about 4 cups) of boiling water.

Set a skillet on the stove and add 1 tablespoon of ghee (you can use butter or vegetable oil instead) along with one finely chopped onion. Stir and sauté until golden.

Coarsely grate one carrot, add it to the skillet with the onion, and stir-fry the vegetables over high heat.

Slice 400 g of mushrooms and add them to the skillet with the vegetables. Stir everything together and sauté over high heat.

Lower the heat under the pot and simmer the boiling potatoes for 15 to 20 minutes, until tender.

Season the skillet with mixed ground peppercorns and salt to taste, stir everything together, and cover for a minute or two.

Ladle the excess cooking liquid from the pot of potatoes into a small bowl and set it aside.

Add the sautéed vegetables and mushrooms from the skillet to the pot with the cooked potatoes.

Using an immersion blender, purée everything in the pot until smooth.

Pour in 200 ml (about 3/4 cup) of cream, to taste, and stir everything together.

Blend everything once more with the immersion blender until smooth.

Check the soup for taste and consistency, adding a little of the reserved cooking liquid if needed, and stir.

Set the pot on the stove and, stirring, bring the soup just to a boil, then take it off the heat.

Ladle the puréed soup into bowls, top with finely chopped herbs and croutons to taste, and serve.
