Meatball Soup with Potato Dumplings

Start the dumpling dough: using a fine grater, grate one potato (boiled in its skin without salt, then peeled) into a deep bowl.

Crack one egg and separate the white from the yolk, then add the yolk to the bowl with the grated potato.

Cut two peeled potatoes into pieces and add them to the pot. Stir with the vegetables and warm through for 2 to 3 minutes.

Pour 1.5 liters (about 6 cups) of water into the pot with the vegetables, cover it, and bring to a boil over high heat.

Add the meatballs to the pot, cover it, and bring the soup back to a boil over high heat.

Turn the dough out onto a floured surface and knead it, then roll it into a rope and cut it into small pieces, shaping each into a dumpling.

Lower the heat, stir everything in the pot, cover it, and continue cooking the soup for 10 minutes.

Drop the dumplings into the pot, add a bay leaf, dried herbs, salt, and a blend of ground black and red pepper to taste. Stir well, cover the pot, and simmer for 7 minutes over medium heat, until done.
