Creamy Pumpkin Soup with Spices

Cut 400 g of pumpkin, half a carrot, half a bell pepper, a quarter of an onion, one tomato, and 200 g of celery into fairly large pieces.

Put the chopped vegetables into a suitable pot or, as in our recipe, a sauté pan, and pour in 400 ml (about 1 2/3 cups) of boiled water.

Set the pan of vegetables on the stove, cover it, and bring to a boil over high heat.

Season the boiling vegetables with salt to taste and pour in 2 tablespoons of vegetable oil.

Add adjika to taste (or a tomato-horseradish-garlic relish, if you prefer). Adjika is a spicy Georgian pepper-and-garlic paste; a little hot sauce works as a stand-in.

Lower the heat, cover the pan, and continue cooking the vegetables for 15 to 20 minutes.

Add your favorite vegetable seasonings to the pan, to taste.

Add dried herbs to the vegetables, to taste.

Using a blender, purée everything in the pan until smooth.

You'll have a lovely, fragrant, smooth puréed soup of just the right consistency.

Cover the pan, set it back on the stove, and warm the puréed soup over low heat for 2 minutes, until heated through.

Ladle the puréed soup into bowls, top with finely chopped fresh herbs to taste, and serve.
