Yuzhny (Southern) Sauce
A spiced sauce that's a cook's indispensable helper! Yuzhny sauce has a sweet-and-sour taste and gives off a wonderful aroma of spices. Use it to season shashlik or roast poultry, or add it to appetizers and other cold dishes. The amount of ingredients given makes about 900 ml of sauce, which should be stored in the fridge.

- Put the allspice in a mortar, add the black peppercorns, cardamom, and cloves, and grind them to a powder with the pestle.
- Peel the onion and chop it with a knife. Peel the garlic and ginger and press them through a garlic press. Put the garlic-and-ginger paste and the onion in a heavy-bottomed saucepan, add the cinnamon, nutmeg, and the spice blend from the mortar, pour in the wine and soy sauce, and blend the mixture with an immersion blender.
- Set the saucepan over the heat, bring the mixture to a boil, cook for 3 minutes, then take it off the heat and let it steep, covered, for 15–20 minutes.
- Wash the apple, peel it, cut out the core with the seeds, and cut the fruit into small cubes. Fry the apple in sunflower oil for 1–2 minutes, then pour in the peach juice, bring to a boil, and cook over low heat, covered, until the apples are soft.
- Combine the contents of the skillet and the saucepan, blend with an immersion blender, then pass it through a sieve (you can skip this step if you don't mind large bits of spice in the sauce).
- Pour the cognac into the resulting sauce, add the sugar and tomato paste, stir, set it over the heat, and cook for a few minutes over low heat.
- Dissolve the starch in cold water and add it to the sauce along with the apple cider vinegar, then bring it back to a boil.
- At this point the sauce is completely ready. You can cool it, pour it into small jars or bottles, and store it in the fridge.
