Okroshka (Cold Kvass Soup) with Red Fish

A summer delight for your nearest and dearest! A recipe for a special okroshka with fish. I recently had the good luck to try this unusual okroshka at a friend's place—different, but delicious.

  • To make okroshka with fish, clean and finely chop the smoked mackerel. Boil the potatoes and eggs, then dice them small. Add chopped fresh cucumbers, radishes (or daikon), green onions, and herbs. Season with salt and pepper to taste. Pour in the kvass. Stir in sour cream, mayonnaise, and mustard to taste. The okroshka with fish is ready. Serve in bowls with bread.
