Apricot Jam with Lemon for Winter

A beloved childhood treat! And an absolutely amazing filling for baking. A delicious apricot jam you can enjoy with tea or fold into sweet pastries. Some recipes call for adding ½ cup of water, but with water my jam comes out too runny. So now I make apricot jam without any water—these fruits are plenty juicy on their own. Sometimes I even have to pour off the extra juice from the apricot jam.

  • Break the washed apricots into halves and remove the pits. If the apricots are large, cut them into 4 pieces; if small, leave them as 2 halves. Put the apricots in a jam pot, cover with the sugar, and squeeze in the juice of half a lemon. Let them sit until a little juice forms, then cook for about an hour until thickened. You can ladle the apricot jam into sterilized jars and seal it for winter.
