  • A very light, pretty, truly festive recipe whose green hues round out the holiday-tree association. This mayonnaise-free salad is ideal for fans of low calories, light days, and tasty, healthy food. It takes just a few minutes to make, so in my opinion that's a great reason to try it in your own kitchen. This dish also belongs to modern Russian cuisine. It's quite possible that it was actually invented by the woman who posted it on a cooking forum. She didn't claim authorship, though, so I really can't say. Cut the well-washed lettuce leaves into wide strips and chop the dill and cilantro. Peel and core the apples, then cut them into cubes. Mix everything well, drizzle with lemon juice, and salt and pepper to taste. Scatter pine nuts over the top and let it rest in a warm place. After that you can keep it in the fridge until serving. I'll say again that this dish is wonderfully refreshing and invigorating, and brings summer to mind.
