  • Winter isn't far off. And even at this time of year you really want to get your vitamins from food. So I always try to have a variety of salads on my table as often as possible. Here's one that's easy and quick — and, most importantly, delicious and healthy. We'll make it with red cabbage. As you know, this cabbage is rich in vitamins, anthocyanins, and phytoncides, so you should definitely eat it when flu season hits. Well, I think I've made a good case for it, so now let's get to the recipe itself. Shred the cabbage and add the onion, chopped very fine, and the apple — I use a tart one and grate it on a coarse grater — and of course the raisins and green peas. You can buy the peas at the store, but it's best to use frozen ones: they keep more vitamins. Just before using them, I cover them with boiling water along with a tiny bit of sugar and salt, literally a pinch of each. Dress it with vinegar first, though I prefer lemon juice, plus sunflower oil. If you'd like to use mayonnaise, go ahead — we've tried it that way too, and it's also tasty.
