Vegetable salads are suitable for any meal. We are used to traditional salads with cucumbers, which usually include tomatoes and onions. But in Greece, there are salad recipes that use only cucumbers. Usually they are put on a plate with all the rest of the food. Have you probably seen such large flat plates? On the bottom and meat, and a leaf of lettuce, and a drop of mustard or mayonnaise.
The salad recipe that I want to present to you is for such occasions.
Cut cucumbers in half. Remove the seeds with a teaspoon, and cut the halves into thin slices. Pour vinegar into a saucepan and put sugar. We put it on a small fire, and without bringing it to a boil, it interferes until the sugar dissolves. Then cook for about five minutes. We should have half a cup of liquid left. We put cucumbers in hot vinegar, a small chili pepper, very finely chopped, chopped coriander leaves, not salted peeled pistachios. Close tightly with a lid or plastic wrap and leave in the refrigerator overnight. If you are waiting for guests, and there is no time to wait all night, then the salad can be kept for only three hours. Although, of course, in this case its taste will be a little different.
