Polish Diet Tomato Soup

A very tasty and healthy dish for lunch! Give it a try! The key ingredient that gives this dish its one-of-a-kind flavor is fresh tomatoes or tomato paste. This soup is especially good to make in fresh-tomato season — in August and September. Another important ingredient is fresh greens and herbs (parsley, dill, basil). Polish tomato soup is a playground for culinary experiments. Some make it with rice, others with noodles, others with millet. You can try all three versions and decide which one you like best. In my case, it's tomato soup with millet. I'm sure this recipe will especially appeal to fans of light, healthy dishes. You can add sour cream or a sauce to the soup. It's all a matter of your culinary preferences.

    If you like a rich broth, you can make this dish with meat. I prefer to make it with a light vegetarian vegetable broth. To do that, add the potatoes and carrot to boiling water; you can also add a bouillon cube.

    Pour boiling water over the tomatoes and gently peel off the skins.

    Cut the tomatoes into cubes and add them to the broth.

    After that, add the millet, the sautéed onion, the chopped potatoes, and the carrot grated on a coarse grater to the pot.
