Step-by-step cooking
Step 1:
Prepare podcherevok (puzanina), salt, garlic and a few sprigs of fresh or dried thyme.
Step 2:
Rub the meat well with 1 tablespoon of salt.
Step 3:
Squeeze out the garlic with a garlic press and rub the inside of the garlic well.
Step 4:
Roll up the podcherevok with a roll and pull it off with twine.
Step 5:
Boil the water, add the rest of the salt, put the roll in a saucepan and add the thyme. Cook after boiling at a very slow boil for an hour and a half.
Step 6:
Cool the finished roll, put it under the press until it cools completely. Remove the twine. Slice the roll thinly and use it for sandwiches.
