  • A napa cabbage and cucumber salad needs very few ingredients. Besides bright colors, a special cut adds to the finished dish. If you have a spiralizer, use it for the cucumbers — the whole cucumber turns into very thin strands that thread through the salad. If you don't have a spiralizer, you can get thin cuts with an ordinary vegetable peeler: slice the cucumber into thin sheets (2–3 mm) and then cut the sheets into thin strips. If you have no special equipment at all, don't despair and don't give up on a great recipe — just cut the cucumber into thin strips with a regular knife. Either way, don't peel it, since the skin gives the salad a bright green color. Finely shred the cabbage. If you have a special shredder, use it; when cutting with a knife, try to make the strips as fine as possible — that makes the salad tender and pretty. Wash the fresh cilantro under running water, dry it, and chop it finely. In a deep bowl, combine the cabbage, cucumber, and cilantro and add peeled roasted peanuts. If the nuts came in their skins, rub them between your palms or in a towel to remove the skins, which can taste a little bitter in the finished dish. In a separate cup, make the dressing: mix the vegetable oil, lime juice (or lemon), salt, sugar, garlic powder (or pressed garlic), and chili flakes. Combine everything into a smooth mixture with a fork and pour it over the vegetables. Mix and serve right away. Enjoy!
