If you have a mixed crowd and can't please everyone, you can find a universal recipe that everyone will like — even the women watching their diet who don't want to overeat in the evening. The combination of feta, tomatoes, and olives can only be called ideal: the salty, creamy taste of the cheese, the juiciness of the tomatoes, and the distinctive flavor of the olives. Another plus of small canapés is that they're convenient to eat — each should be small enough to eat in one bite, without biting it in half, using utensils, or extra dishes. Making the simplest canapés takes no more than 10 minutes, and you can start once the guests have arrived, even if the visit was a surprise. Cut the feta into cubes. Feta tends to crumble when cut, so to keep the cubes intact, use a very sharp knife and make confident, even cuts. Cherry tomatoes are the perfect choice for canapés — their small size keeps them from running and helps them look good in the finished dish. Wash and dry the tomatoes well, then cut them in half. Be sure to use pitted olives; drain the brine and leave them in a colander so all the excess liquid runs off. Assemble the canapés: place the pieces of feta on a plate, top each with a tomato half — cut side up, so the juice doesn't run onto the cheese and the canapé keeps its shape and looks — add an olive on top, and pierce the whole stack with a wooden skewer. Serve the canapés on a pretty dish or plate right away, before the cheese, tomatoes, and olives have a chance to dry out. If you like, garnish the dish with herbs such as rosemary. Enjoy!
