Carrot and Celeriac Salad

A vitamin-rich salad that's very easy to make! This simple, quick salad will win over not only those watching their figure but also anyone who doesn't like spending much time in the kitchen, since it comes together in just 15 minutes. Two large carrots make four servings of an excellent light side for meat. Vegetables have been a constant part of the Russian table since ancient times. They were eaten raw, boiled, steamed, baked, salted, and fermented. Salads came along much later, by the 19th century, and were at first made from a single vegetable — like this recipe.

  • Wash and peel the carrots and celeriac; cut the carrots into strips and the celeriac into thin slices, and mix them. In a separate bowl, mix the lemon juice and sugar — best with a whisk, so the sugar fully dissolves — and pour this mixture over the salad, then set it aside for a while. Now make the dressing: season the sour cream with salt and pepper to taste. Dress the carrot and celeriac salad with the sour cream just before serving.
