Classic Okroshka with Vinegar

A simple, refreshing soup — quick, filling, and appetizing! Is there anyone who doesn't love okroshka? I've certainly never met them. It really is a delicious dish, light and perfect for summer. Here I suggest making okroshka dressed not with the usual kvass (a fermented bread drink), but with water, a splash of apple cider vinegar, and sour cream — it's so good!

  • Boil the potatoes (young ones are best) in their skins, then let them cool. Peel off the skins and cut into cubes. Hard-boil the eggs and dice them too. Rinse the green onions and dill, pat them dry, and finely chop. Cut the sausage and cucumbers into cubes about the same size as the potatoes. Combine the prepared ingredients in a bowl and refrigerate for about 2 hours (okroshka is served chilled). Once the time is up, dress the soup with cold sour cream and water, then add the vinegar and salt. Enjoy!
