Triple Royal Ukha with Trout, Crucian Carp, and Sterlet

A wonderfully flavorful recipe for "royal" ukha — the classic Russian clear fish soup. It's so good you can't drag people away from the table! I've made this ukha many times and everyone loves it. It comes out best of all cooked over a campfire. The most important rule: never top up the broth with water while it cooks.

  • First broth. The small fish goes into the first broth. So you don't have to fish the little ones out later, wrap them in cheesecloth before adding. Cook for 1 hour, then lift out the cheesecloth with the fish and discard it. Second broth. Add the trout (or pike). As with the first broth, wrap the fish in cheesecloth — but this time don't throw it away. Peel the onions and carrots and add them whole. Cook for 30 minutes, then remove the onion and carrot and cook for another 30 minutes. After cooking, take the fish out of the cheesecloth, remove the skin and all the bones, and mash the flesh with a fork into a paste. Third broth. Cut the sterlet (or sturgeon or beluga) into small serving pieces, roughly 3 by 5 cm (about 1 by 2 inches). Plan on two or three pieces per serving. Peel the potatoes and cut into small cubes. Add the fish and potatoes. Lightly salt the broth. Cook until the potatoes are tender, since the fish will be done a little sooner. To finish. Stir the mashed trout (pike) into the finished ukha and pour in the vodka. Adjust the salt to taste. If the broth is cloudy, clarify it with black caviar or with egg white whisked with salted water, added before you stir in the fish paste and vodka (let the broth simmer about five minutes). Cover and let rest for 10 minutes. The ukha is ready — enjoy!
