Cooking method
1. Choose your favorite pot of a suitable volume, pour water, spread the pre-washed meat. Cook the meat broth for 2 hours.
2. Meanwhile, we are preparing vegetables. Peel the potatoes and cut into cubes. Shred the cabbage. Peel the carrots, grate them, do the same with parsley root and beetroot (pour vinegar over the grated beetroot, mix).
3. Melt the pork fat in a frying pan, spread the beetroot, add sugar and tomato paste. Simmer the beets until soft.
4. Peel the onion, cut into cubes.
5. Pork fat, garlic and parsley are crushed with a blender.
6. We extract the meat from the finished broth and send the potatoes to cook.
7. After 10 minutes, add the cabbage.
8. Fry onions, parsley root and carrots in butter until golden brown, then send them to the broth together with beets.
9. Cut the meat into cubes, put it in borscht together with pepper peas and bay leaves (meat is added 5 minutes after fried vegetables).
10. After 7 minutes, add the lard with garlic, salt, and cook for another 3 minutes.
That's it, borscht is ready! It remains to withstand it for 20-30 minutes under the lid and can be served to the table. Serve the borscht, seasoned with sour cream.
