Classic Borscht with Salo, Beef, and Potatoes

A meal inspired by traditional Ukrainian cooking. Borscht is a beloved, hearty, and satisfying dish. I'm sharing a classic recipe that anyone can follow to make borscht and be delighted with the result.

    1. Grab your favorite pot of a suitable size, fill it with water, and add the rinsed meat. Simmer the meat broth for 2 hours. 2. Meanwhile, prep the vegetables. Peel the potatoes and cut them into cubes. Shred the cabbage. Peel and grate the carrots, and do the same with the parsley root and the beets (toss the grated beets with the vinegar and mix). 3. Melt the rendered pork fat in a skillet, add the beets, then stir in the sugar and tomato paste. Simmer the beets until soft. 4. Peel the onion and cut it into cubes. 5. Blend the salo, garlic, and parsley together into a paste. 6. Lift the meat out of the finished broth and add the potatoes to cook. 7. After about 10 minutes, add the cabbage. 8. Sauté the onion, parsley root, and carrots in butter until golden, then add them to the broth along with the beets. 9. Cut the meat into cubes and return it to the borscht along with the peppercorns and bay leaves (add the meat about 5 minutes after the sautéed vegetables). 10. After 7 minutes, stir in the salo-and-garlic paste, season with salt, and cook for another 3 minutes. That's it — the borscht is ready! Let it rest, covered, for 20–30 minutes, then serve. Serve the borscht topped with a dollop of sour cream. Enjoy!
