Rice with Peanuts and Vegetables — a Side for Fish
A wonderfully tasty side dish with corn! It's a mistake to think that meat, fish, and poultry dishes are fine on their own and can be served with just any side. Potatoes, for instance, are perfect with meat, and chicken pairs nicely with vegetables. But what about fish — what should you serve alongside it? Let me share a recipe for a rice side dish made just for fish.

Cooking method
- Start by cooking the rice until fully done. Then heat the oil in a skillet over medium heat and sauté the finely chopped garlic and onion. Add the finely chopped peanuts (optional) and the pepper, and fry for 5–7 minutes, stirring. Add the corn and fry for another 5 minutes or so. Then stir in the tomatoes cut into small cubes, the herbs, and the rice, and season with salt and pepper. Cook a couple more minutes and take it off the heat. Your rice side dish for fish is ready.
