  • Start by cooking the rice until fully done. Then heat the oil in a skillet over medium heat and sauté the finely chopped garlic and onion. Add the finely chopped peanuts (optional) and the pepper, and fry for 5–7 minutes, stirring. Add the corn and fry for another 5 minutes or so. Then stir in the tomatoes cut into small cubes, the herbs, and the rice, and season with salt and pepper. Cook a couple more minutes and take it off the heat. Your rice side dish for fish is ready.
