  • I just love fish salads — nourishing, easy to make, and good for anything from breakfast to a special dinner. Fish salad with smoked cod is my favorite. I usually start by pickling the onion: squeeze the juice from half a lemon, add water and seasonings, then pour the marinade over the onion cut into rings and let it sit for 10 to 15 minutes. Now comes the part I dread most — cleaning the fish. Peel the skin off our "golden fish," remove the bones, and break it into small pieces. My tip: peel off the skin first and cut along the backbone, which makes it much easier to pull out all the bones. Then chop the hard-boiled eggs and pickled cucumbers and mix everything together. In summer I use only fresh cucumbers, but that's a matter of taste — the pickled ones give the salad an interesting note. All that's left is to dress it with mayonnaise, add the seasonings and herbs, and this delicious fish salad with smoked cod is ready to serve.
