Cooking method
- Cover the beef marrow bone with cold water and bring to a boil. Drain the water, rinse the bone, and cover it with fresh water. Once it boils, turn the heat down as low as it goes. Simmer the broth for 3 hours. Then add the beef, a whole onion, and a peeled carrot, and simmer the broth on low for another 2½ hours. Skim the fat off the broth and put it into a skillet. In that fat, sauté the beet cut into thin strips. Add vinegar, sugar, and tomato paste to the beet. In another skillet, fry the chopped onion and the carrot cut into thin strips in butter. Cut the bell pepper into small dice and add it to the carrot and onion. Chop the tomatoes and add them to the sauté. Cook until the liquid has evaporated. Add the diced potatoes to the broth. After 5 minutes, add the shredded cabbage. Fifteen minutes after adding the cabbage, add the stewed beet and the tomato sauté to the broth. Cook for another 10–15 minutes. Add the finely chopped boiled beef, then the spices. Cook for 5 minutes. Mash the garlic with the parsley and stir it into the borscht. Salt to taste. After 2 minutes, turn off the heat and let the borscht rest, covered. Serve no sooner than 20–30 minutes later. Just before serving, top the borscht with sour cream and finely chopped dill.
