Rice Salad with Crab, Celery, and Tomatoes

  • This is the kind of dish they love in Southeast Asia, where spicy is the rule—so this recipe leans on plenty of pepper and mustard. Start by cooking the rice, however you usually do it, and put it in a large bowl. Finely chop the crabmeat and the tomatoes (peel the tomatoes first), and dice the onion. Finely chop the celery. Add it all to the rice, fold in the mayonnaise, and mix well. In a jar, combine the vinegar, olive oil, chili sauce, mustard, crushed garlic, and dried basil. Seal the jar tightly and shake until the dressing is evenly blended. Pour the dressing over the rice and crab mixture, working carefully so the whole surface is coated. Refrigerate for two hours. Turn the finished salad out into a porcelain or glass bowl, smooth the top, and garnish with sliced dill pickles cut into rounds. A sprig of dill is a nice touch, too. This salad also works well as a side for fried fish.
