Crab and Beet Salad "New Year's Fantasy"
This bright, vitamin-packed salad isn't just for the holidays! In our minds, crab sticks almost always pair with canned corn—a great combination, but a very familiar one. One year before New Year's, I picked up a magazine full of tips for hosting our favorite holiday, along with a handful of recipes. There weren't many, but they were all wonderful—and this crab and beet salad, "New Year's Fantasy," stood out for how simple and unexpected it was. I never would have guessed that crab sticks go so beautifully with beets. Here's how it's done.
Cooking method

Step 1:
Boil the beets and eggs, then let them cool.

Peel the garlic and press it through a garlic press.

Dice the crab sticks and eggs.

Grate the cheese and beets on the coarse side of a box grater.

Stir the pressed garlic, salt, and ground pepper into the mayonnaise, then fold the dressing into the combined ingredients.

Chill until serving, then garnish with a thin layer of mayonnaise and little parsley "trees."
- Boil the beets and eggs and let them cool; meanwhile, peel the garlic and press it through a garlic press. Dice the crab sticks and eggs, and grate the Dutch-style cheese and the beets on the coarse side of a box grater. Stir the garlic into the mayonnaise along with salt and ground pepper, then fold the dressing into the thoroughly combined ingredients. Chill in the fridge until you're ready to serve. As for decorating—that's where the "fantasy" comes in, so let each cook dress up this little masterpiece however they like. But if you can't wait to dig in, just smooth a thin layer of mayonnaise over the top and stand a few parsley sprigs upright like little Christmas trees. Simple, and very festive.
