Boil potatoes in a uniform until ready. We put it under cold water for a few minutes, and remove the peel. Now the potatoes should cool down. Herring fillets are cut into strips 2 cm wide. Finely chop cucumbers and onions. Peel the apples and cut them into cubes, about 2 centimeters each side. We put all this in a bowl.
Separately mix the juice from half a lemon, kefir and cream. All this should be beaten in a mixer to create a homogeneous mass. Pour the dressing into the prepared ingredients. Add salt and pepper. Since the herring is already salty, the salt should be poured very carefully, constantly stirring and tasting.
We put the chopped parsley last. And again, mix everything thoroughly.
Since this salad is very nutritious, it is served as a main dish, for example, for dinner. They eat it with bread.
