- How do you make a salad with smoked chicken and grapes? The rich flavor of smoked chicken, sweet ripe grapes, and crisp celery come together in this salad so harmoniously that it's sure to become a favorite and stay in your cookbook for a long time. You can make it as a snack or a main course, it can serve as a full dinner, and it's also great for serving to guests — they're sure to be pleasantly surprised by this unusual dish. First, prep all the ingredients so the rest of the cooking goes quickly and easily: — cut the smoked chicken into medium-sized pieces. The shape can be whatever you like — strips or cubes. In short, go by your own preference here; — wash the celery stalks, blot off the excess moisture with a paper towel, and cut them into small pieces; — wash and dry the grapes. It's best to choose sweet, ripe seedless grapes, but you can use grapes with seeds too — in that case you'll have to remove all the seeds by hand, or the dish won't be very pleasant to eat. Cut the grapes in half and remove the seeds if needed; — wash the green onion, dry it, and chop it finely. Everything's ready, and you can move straight on to assembling the salad. In an attractive salad bowl, combine the measured mayonnaise, Greek yogurt (it should of course be unsweetened), lemon juice (preferably freshly squeezed), Dijon mustard, and freshly ground black pepper. Mix everything well until smooth. Next, add the chopped chicken, celery pieces, and prepared grapes to the bowl. Add two-thirds of the chopped green onion. Mix everything well. Taste for salt and add it if needed, then mix again. The salad is ready — all that's left is to portion it onto serving plates and sprinkle the remaining green onion on top. When serving, you can add fresh lettuce leaves. Enjoy!
- It's best to make the mayonnaise yourself — it'll be tastier and healthier. See some interesting homemade mayonnaise recipes here. You can also use not just mayonnaise as the dressing but sour cream or plain yogurt. Use them on their own or mix them with mayonnaise in any proportion you like — this will lower the calorie content of the dish.
