  • How do you make Olivier salad with beef tongue and cucumbers? I know several recipes for Olivier salad, but this is my favorite. You could put a "party food" label right next to this one. First I make the mayonnaise. I take three yolks and whisk them with vegetable oil, and when the mayonnaise starts to thicken, I add lemon juice and salt. I prefer not to boil the carrots and potatoes but to bake them in foil in the oven — that way the vegetables hold on to their vitamins, aroma, and flavor better, and they cook much faster, too. I boil the beef tongue with plenty of fresh and dried dill. I cut the cooked vegetables and the cold, lightly salted tongue into small cubes and mix them. The same way, I cut the pickled and fresh cucumbers and combine them, along with the fresh and canned peas, with the tongue and vegetables I cut earlier. Next I take sweet-and-sour apples, cut them into small cubes too, and add them to the nearly finished salad. I cut the boiled quail eggs in half, add them to the salad, and mix. Now it's the mayonnaise's turn — I stir mustard into it, dress the salad, and mix. I finely chop green onion and dill and mix again. You can serve it in boats made from fresh cucumbers, but I only make this salad for New Year's and serve it the traditional way, in a big old-fashioned salad bowl. In this recipe I give the ingredient amounts for a single serving.
