Cloudberry Jam for Winter

Bright, delicious, and good-for-you cloudberry jam! This northern berry is packed with vitamins and very good for you. That's why I always make jam with it and freeze some for winter. In winter you can use the jam for hand pies, kissel, and lots more.

  • How do you make cloudberry jam for winter?
    1. Sort the cloudberries and rinse them in a sieve under water. Let the excess water drain off. 2. To make the syrup, pour water into a saucepan, add the sugar, and stir. Once the crystals dissolve, boil for another five minutes. 3. Put the cloudberries into the syrup and gently stir. As foam starts to form, skim it off. Once it comes to a boil, cook over low heat for five minutes. Turn off the heat and let the jam cool. Repeat this process three times. 4. Spoon the hot jam into sterilized jars, let it cool, and store it in a cool place.

  • For cooking, it's best to use neutral-tasting filtered or bottled water. If you use tap water, keep in mind that it can give the dish an unpleasant off-taste.
