Step 1:
How to bake potatoes onions and tomatoes in the oven Prepare all the necessary products. Of course, it is best to take fresh vegetables, a new crop. Such potatoes and tomatoes are much tastier than those that are sold in winter. Although now at any time of the year you can find more expensive, high-quality vegetables that are not inferior in taste to seasonal ones.
Step 2:
Wash the potatoes well, it is best to use a brush and a special tool for washing vegetables. Peel the potatoes, - try to cut the peel thinner, again it is best with a vegetable peeler. Cut the potatoes into half circles. If you have small tubers, then you can cut them into mugs.
Step 3:
Peel and slice the onion into thin half rings. In fact, it doesn't matter how you slice it. It can be both onion rings and cubes.
Step 4:
Mix the sliced potatoes with the chopped onion and season with salt. Also at this stage, you can add some of your favorite seasonings to the dish: perhaps garlic powder, Provencal herbs, ground allspice or hops-suneli. Choose according to your taste!
Step 5:
Wash the tomatoes, remove the stalk and cut into circles. The mugs should not be very thick, the optimal thickness is about 5 mm.
Step 6:
Prepare a heat-resistant baking dish. Put half of the potatoes and onions in the first layer.

Then layer tomatoes.

Then the remaining potatoes with onions.
Step 9:
Pour vegetable oil over the dish. It can be absolutely anything: from corn to olive. But since the oil will undergo heat treatment, it is better to take refined types of oil.
Step 10:
Cover the mold tightly with foil with the shiny side down. Bake in a preheated 180 degree oven for about 40 minutes without removing the foil. If you want the top of the dish to brown a little, 10 minutes before the end of cooking, remove the foil.
Step 11:
Serve the dish right away while it's hot! A great side dish for meat, poultry or fish is ready! Or a wonderful dish for a lean table! Bon appetit!
