Step 1:
To prepare gingerbread cookies, take the dough prepared earlier. I remind you how it was made. Take the products on the list for the test.
Step 2:
Mix all the dry ingredients: flour, ginger powder, ground cinnamon, baking powder, powdered sugar and salt. Stir until evenly distributed.
Step 3:
Cut the solid butter from the refrigerator into cubes and mix it into the dough, first you will get a crumb, as in the preparation of ordinary shortbread dough, which you gradually collect into a lump, adding honey and egg yolk. Leave the protein for the glaze.
Step 4:
Knead the soft dough, put it in a food bag and put it in the refrigerator for half an hour (or as long as you want). the dough can be made in advance, a few hours before baking, if necessary.
Step 5:
Using a mixer, beat the cooled protein and lemon juice into a steep foam.
Step 6:
Continuing to beat, gradually add powdered sugar, beat until stable peaks. Transfer the glaze to a pastry bag or bag, which then cut off the tip, leaving a small hole.
Step 7:
Roll out the dough with the desired thickness - if you want a lot of crispy gingerbread, then thinner, if soft, then thicker. I rolled out somewhere up to 0.5 cm. Cut out the gingerbread cookies with a mold.
Step 8:
Put in the oven heated to 180 degrees for 10 minutes (depends on the oven and the thickness of the gingerbread).
Step 9:
Cool the finished gingerbread and apply the drawings with glaze.
New Year gingerbread cakes are a nice pastry for a tea party.
