Fried Zucchini with Tomatoes and Bell Pepper

Step 1:

Cut two fresh zucchini into evenly thick rounds, put them in a bowl, season with salt and pepper to taste, and toss.

Dredge each zucchini round in flour on both sides and lay it in a skillet you've preheated with a little olive oil.

Fry the zucchini over low heat until golden on both sides, then transfer them to a bowl.

Dice two tomatoes, dice the seeded bell pepper the same way, and coarsely chop the green onion.

Put the vegetables in the skillet, add a little olive oil, and sauté lightly, stirring with a spatula.

Keep simmering the vegetables for about seven minutes over low heat, covered. After five to seven minutes, add lemon juice, cover, and simmer another three minutes. Add the zucchini, stir the vegetables well, and continue simmering, covered, for five more minutes.
