    In order to make sure that the yeast is fresh, we will prepare a sourdough. To do this, heat the milk to 40 degrees (it feels like "pleasantly warm "), add all the sugar and yeast. Leave the dough in a warm place for 15 minutes. I leave it in the microwave, in which I have just warmed up half a glass of ordinary water. If after 15 minutes a lush yeast cap forms on the surface of the milk, then everything is going as it should. If not, you will have to use other yeast.

    In a bowl with sourdough, add soft butter, salt and sift some of the premium wheat flour.

    First add most of the flour, mix, and then adjust its amount depending on the properties of gluten, because flour is different for everyone.

    Beat in the chicken egg and add flour again. Add the flour in parts until the dough is smooth and will only stick slightly to your hands. The main thing is not to score the dough with flour, this will not benefit any baking.

    Assemble the dough into a ball, cover the bowl with a towel and leave it in a warm place for an hour to come up.

    That's how my dough came up, it doubled in size. Lubricate your hands with sunflower oil and transfer the dough to the work surface.

    With a knife, cut the ball into eight equal segments.

    Dust the work surface with flour. Assemble each segment into a ball.

    With a rolling pin, roll the ball into a flat cake with a height of no more than two millimeters and a diameter of about 15 cm. Use a knife to make incisions all over the surface. So the tortilla will not rise in one bubble when frying. Don't worry, there will be no through cuts on the finished tortillas.

    Heat the frying pan, add half a teaspoon of sunflower oil and warm it up. Put the tortilla in a frying pan and fry for about two minutes over medium heat until golden brown. Then turn the tortilla over and fry for another two minutes until fully cooked. While one tortilla is being fried, you can roll out the next one. But don't forget to keep an eye on the one in the pan! It should not burn.

Is it worth saying that these tortillas are much tastier than even the freshest white bread?! You need to control yourself so as not to eat them still hot, and not cause irreparable harm to the waistline.
