    Gather all your ingredients. Fresh broccoli is best, of course — look for a bright green color and firm florets. If you're using frozen broccoli, thaw it ahead of time and drain off any excess liquid. Use large eggs, ideally farm-fresh — not only are they big and tasty, but their bright yolks add color to the dish.

    Wash the broccoli well. The florets are small and can trap quite a bit of dirt, so clean them carefully — rinse them in warm water, ideally using a vegetable brush. Cut the broccoli into small florets and discard the tough stalk.

    Heat the vegetable oil in a skillet. It can be anything from inexpensive sunflower oil to premium olive oil, but it must be refined — only refined oils hold up without scorching in the pan. Add the broccoli florets and fry them for just 2–3 minutes. You can add spices and seasonings to the pan if you like: a minced garlic clove, diced onion, or maybe ground paprika, dried dill, or thyme. It's up to you!

    Wash the eggs well — this matters, since the shells carry a lot of bacteria. Crack them into a bowl and stir with a fork. You can leave the eggs unbeaten if you'd rather keep the yolks whole.

    Salt the eggs. At this point you can also pepper them or add dried herbs.

    Pour the eggs over the broccoli in the skillet and cook over low heat for about 10–12 minutes. You can cover the pan if you like. Make sure the egg whites are fully cooked — the whites are where any bacteria from the shell would be.
