Chicken Zrazy with Egg and Herbs

Tender, unusual, and light—you can serve them without any side dish. I'd had chicken zrazy with egg and herbs as a guest before but never tried making them myself. Well, I finally did! And I can say these turned out really nicely. For anyone curious, here's how to make them.

Cooking method

    Ready to make zrazy with egg? Gather all your ingredients. Any chicken works here—breast or thigh, whichever you prefer. Use fresh or dried dill, and in general choose whatever herbs and spices you like best.

    Grind the chicken and pork fatback together through a meat grinder, mix, season with salt and pepper to taste, add the water, and knead into a smooth mixture.

    Hard-boil the eggs, peel them, and chop them finely.

    Mix the chopped eggs with the chopped herbs.

    Divide the chicken mixture into portions and flatten each into a patty about the size of your palm. Place a teaspoon of the egg filling in the center of each.

    Pinch the edges of the patty closed and shape it into a rounded cutlet. Roll each one in breadcrumbs, then fry in oil on both sides until cooked through. Once all the zrazy are done, arrange them on a platter and serve.
