- Prep your ingredients: - peel the onion and garlic and finely dice them; - slice the ham into thin strips; - grate the cheese on the coarse side of a box grater; - rinse the green onions and chop them with a sharp knife; - rinse the tomatoes and cut them into rounds. 2. Sauté the onion and garlic in olive oil until translucent, about 8 minutes, then add the tomato sauce and chopped green onions to the pan. Season with salt and pepper, stir in the Italian herbs, and simmer over low heat for 10 minutes. 3. In a separate saucepan, melt the butter over low heat, then whisk in the flour and cook until it turns lightly golden. Pour in the milk in a thin stream, whisking constantly by hand so the sauce comes out smooth and lump-free. Once it comes to a boil, season with salt, pepper, and a pinch of nutmeg, and cook, stirring, for 10 minutes — that's your béchamel. 4. Assemble the lasagna: spread a little béchamel over the bottom of a baking dish, lay down a layer of lasagna sheets, spread over half of the tomato sauce, scatter with ham, then sprinkle with cheese (use 1/3 of it). Repeat the layers in the same order, then coat the top with béchamel. 5. Bake in an oven preheated to 350°F (180°C) for 25 minutes. Take out the lasagna, arrange tomato rounds over the top, sprinkle with the remaining cheese, and return it to the oven for 10 minutes. Don't rush to slice the finished lasagna — let it rest for about 15 minutes so it sets and the pieces hold together cleanly when cut. Enjoy!
