- Not everyone realizes that brains are an offal you can cook and eat. Good brains actually look quite nice — pale pink, with a firm texture. If what's for sale looks darkened, has blood clots, or a torn membrane, it's better to pass it up; only quality offal will give you a tasty finished dish. Brains aren't packed with a lot of nutrients, but they are rich in phosphorus and vitamins B, PP (niacin), and E. Dishes like this aren't for every day, but they're just the thing to mix up the menu. 1. Rinse the brains thoroughly under running water, then put them in a bowl of cold water and let them soak for a while. Soaking in cold water makes it easy to peel off the membrane. Cut the prepared brains into pieces. 2. Lay the brains out on the work surface in a single layer and season with salt and pepper to taste. If you like, sprinkle with freshly squeezed lemon juice or apple cider vinegar, but that's optional. 3. Pour the flour onto a flat plate. Dip each piece of brains in it, coating all sides with flour. 4. Pour the vegetable oil into a skillet and set it over the heat. Any oil you like works — olive, corn, or sunflower — and it's best to use a refined one. 5. Add the pieces of brains to the hot oil. If the pan is roomy, they'll all fit at once; otherwise, fry them in two batches. 6. Fry the brains on both sides until golden brown, about 10–12 minutes total. Serve the dish cold, garnished with fresh herbs if you like. Enjoy!
