Fish Braised in Sour Cream
A simple, quick recipe for fish braised in sour cream. Any fish comes out more delicate braised in sour cream than cooked without it, which is why this is a go-to way to prepare fish for kids and older folks. But it's just as tasty on an everyday family table. You can serve it with a side or on its own, with fresh bread that's wonderful for dipping in the creamy sauce. Mashed potatoes or fluffy boiled rice make the usual sides. Scatter over some chopped dill or green onion and enjoy!
Cooking method
-
Step 1:
Gather the ingredients from the list.
-
Step 2:
Start by cleaning the fish. Scale it, remove the innards, head, tail, and fins. Rinse it well and fillet it, then cut the fillet into serving-size pieces.
-
Step 3:
Peel the onion and slice it into half-rings.
-
Step 4:
Heat a little oil (adjust the amount to the fish's fat content — if the fish is oily, like the trout, salmon, or mackerel used here, use the bare minimum). Add the onion to the pan and sauté it briefly.
-
Step 5:
Lay the fish pieces on top of the onion and sear them briefly together.
-
Step 6:
Flip the pieces over, scooping some onion along with them, and lightly sear the other side too — just enough to "seal" the fish.
-
Step 7:
Add the sour cream, season with salt and pepper to taste, cover, and simmer gently for about 25 minutes (again, depending on the type of fish).
-
Step 8:
The fish braised in sour cream is ready. Serve it with a potato side or simply with fresh bread.
- Fish braised in sour cream is a simple, satisfying dish.
