Chicken with Mushrooms in a Slow Cooker
A hearty, tasty everyday dish for the whole family! Chicken with mushrooms in the slow cooker turns out especially appetizing and tender. A little curry powder gives it a bright, gently spicy flavor with pleasant Asian notes.
Cooking method
-
Step 1:
How do you make chicken with mushrooms in a slow cooker? Gather all the ingredients. You can use any part of the chicken, but I use boneless fillet so there are no bones in the finished dish. Feel free to adjust the proportions a little to your taste.
-
Step 2:
Rinse the chicken fillet under running water, pat it dry, and cut it into large pieces. Heat the slow-cooker pot on the "Fry/Sauté" setting until hot, pour in a little vegetable oil, and add the chopped chicken. Cook for 7–8 minutes, until golden.
-
Step 3:
Clean the mushrooms and cut them up. Quarter the large ones; small ones can just be halved.
-
Step 4:
Peel the onion and garlic and rinse them in cold water. Cut the onion into half-rings or a bit smaller. Just chop the garlic into pieces.
-
Step 5:
Wash the bell pepper and tomatoes and cut them into pieces as well.
-
Step 6:
Once the chicken is browned, transfer it to a plate. Add the sliced mushrooms to the pot and cook them for 5–7 minutes. Then add the chopped onion and cook everything together for another 3–4 minutes.
-
Step 7:
Now return the chicken to the pot. Add the bell pepper, tomatoes, and garlic, and cook everything together for another 2–3 minutes. Then pour in hot water, add the curry powder, and season with salt and pepper to taste. Switch the cooker to the "Stew" program for 20 minutes—adjust to your own machine.
-
Step 8:
The chicken with mushrooms is done! Serve it on its own or with any side dish. Enjoy!
- Keep in mind that the cooking time and setting here are approximate. Every slow cooker behaves a little differently—even identical models from the same maker can have their quirks. Before making a new dish in yours, read the manual, then start with dishes you already know before moving on to new ones, dialing in the setting and time for your own machine.
- Buy fresh, medium-sized button mushrooms that are snowy white, with no spots, damage, or off smell. They shouldn't feel slimy. Rinse off any grit under a stream of warm or cold water and trim away any bad spots. Tiny mushrooms under about 3/4 inch (2 cm) don't need peeling—just rinse them well; for larger ones, it's worth peeling off the thin skin from the cap.
