Fry the vermicelli in a dry frying pan until golden brown, put it on a plate. Now pour vegetable oil into the pan.
All ingredients, except garlic, cut into cubes. Put onions and carrots in a hot frying pan, cover with a lid and fry over medium heat for 5-7 minutes, stirring constantly.
Then put the chicken fillet, and fry again under the lid for 5 minutes, do not forget to stir all the ingredients with a spoon. Now add pepper and eggplant, simmer for another 5 minutes.
After that, we put vermicelli in our vegetable and meat stew, add water (to the edges of the pan), salt, and flavor with our favorite spices.
Cover with a lid and simmer for 20 minutes. After 20 minutes, remove the lid, add garlic squeezed through a press, and simmer for another 10 minutes. Bon appetit!
