Step 1:
How to make a lush charlotte with cherries? Very simple, no more complicated than with apples. First, prepare the necessary ingredients according to the list. Take flour of the highest grade, eggs - large selected. Vanilla sugar can be replaced with a pinch of vanilla.
Step 2:
Wash the cherry, dry it, remove the tails of the stone and put it in a colander to drain excess juice. If the cherry is frozen, first defrost it and drain the released juice.
Step 3:
Sift the flour together with 30 g of starch into a bowl. Pour in the baking powder and mix everything with a spoon.
Step 4:
Beat eggs with a mixer to a fluffy light foam, gradually adding sugar and vanilla sugar. The mass should increase in volume by 3-4 times and lighten.
Step 5:
Pour the sifted flour mixture into the dough in parts and gently mix with a spatula, trying not to precipitate the mass. You may take more or less flour than I do. Be guided by the consistency of the dough.
Step 6:
The consistency of the dough should be watery. Instead of mixing with a spatula, you can beat the dough with a mixer at low speed and for a short time.
Step 7:
Pour the remaining corn starch into the prepared cherries and mix so that the berries are evenly panicked. Starch can be replaced with flour.
Step 8:
In a baking dish lined with parchment (Ø 18 cm), put the cherries in starch. Pour the sponge dough over the berries. You can just mix the berries into the dough and pour everything into the mold.
Step 9:
Bake the cake in preheated to 170°In the oven for about 40-55 minutes. The exact time depends on your oven. During baking, do not open the oven door so that the biscuit does not settle.
Step 10:
Leave the finished charlotte in the mold for 15-20 minutes, then remove from the mold and transfer to a dish. Bon appetit!
When the top layer of baking is slightly browned, check it for readiness: pierce it with a wooden skewer in several places, if the skewer comes out dry, then the form (or baking tray) can be taken out of the oven.
