Step-by-step cooking

Cooking time: 2 h 30 min
  1. Step 1:

    Step 1.

To prepare meat pies, we will initially prepare yeast dough. To do this, take the necessary ingredients and bring them all to room temperature. Warm up the kefir a little so that it becomes slightly warm. Sift the flour through a sieve to saturate it with oxygen. Instead of kefir, you can use milk.

  2. Step 2:

    Step 2.

In a small bowl, combine a little warm kefir, yeast, sugar and a little flour. Mix everything and leave to stand for 10-15 minutes, in order to start fermentation in yeast. Air bubbles will actively appear on the surface. This part is called sourdough.

  3. Step 3:

    Step 3.

Pour the sourdough into the dough bowl. Add the remaining kefir, salt and eggs to it. Mix it up.

  4. Step 4:

Gradually add flour and knead the dough.

  5. Step 5:

    Step 5.

Depending on the quality of flour, it may take more or less. Be guided by the consistency of the kneaded dough. It will almost stop sticking to your hands. Cover the bowl with the dough with a towel and let it stand in a warm place for an hour, in order for the dough to fit.

  6. Step 6:

    Step 6.

While the dough fits, prepare the filling. Minced meat can be taken from any kind of meat. I will use minced pork. You can buy it ready-made or cook it yourself by rolling the meat through a meat grinder.

  7. Step 7:

    Step 7.

Add finely chopped onion and egg to the minced meat. Add a little salt and spices to taste. Mix the filling well so that the ingredients are evenly distributed among themselves.

  8. Step 8:

    Step 8.

After standing, the dough began to fit well. You can start working with him.

  9. Step 9:

    Step 9.

Divide the dough into 2-3 parts and cut each part into small pieces. Be guided by the size of the pies you want to get.

  10. Step 10:

    Step 10.

Mash each piece of dough into a flat cake a little. You don't even have to use a rolling pin to do this. You can stretch it just with your hands. Put a little meat filling in the center, pinch the edges and form a pie.

  11. Step 11:

    Step 11.

Put the pies on a baking sheet covered with cooking paper. Cover the pies with a towel and let them stand for 10 minutes so that they come up a little.

  12. Step 12:

    Step 12.

Before putting the baking sheet in the oven, brush the pies with egg yolk and sprinkle a little sesame seeds. Put the baking sheet in the oven, preheated to 180 degrees, for 25-35 minutes. Be guided by your oven.

  13. Step 13:

    Step 13.

The finished pies will rise a little and become golden in color. Cool them a little and serve them to the table.

  14. Step 14:

    Step 14.

    Bon appetit!
