    How delicious is it to bake a whole dorado in the oven? Prepare the fish. If you have it frozen, then take it out of the freezer in advance and leave it at room temperature until it is completely defrosted.

    The recipe used freshly caught sea fish, so I specified the cooking time without taking into account defrosting. Clean the fish from the scales, remove all the insides and gills. Rinse each carcass under running cold water and dry with paper kitchen towels or napkins.

    Prepare the marinade. In a small deep bowl or plate, mix soy sauce, vegetable oil and spices. I took turmeric (it gave dorada an amazing golden hue), a clove of garlic passed through a press, 0.5 tsp. spoons of dry rosemary and a pinch of nutmeg. If you don't have soy sauce, then replace it with regular salt to taste. Mix all the ingredients well.

    Make shallow incisions on each fish with a sharp thin knife. This is necessary so that the fish is better marinated and evenly baked in the oven. Use a silicone brush or your hands to coat each carcass on both sides and inside, too. Leave to marinate for 10-15 minutes.

    Cover the baking sheet with baking paper or sprinkle with a small amount of vegetable oil. Lay out a few rings of pre-peeled and chopped onions. Put dorado on top in one layer. Put cherry tomatoes between the fish. Onions and tomatoes can be excluded from the recipe, without these two ingredients it will also turn out very tasty.

    Put the fish in a preheated oven and bake for about 15-30 minutes (depends on the size of the dorado and the capabilities of your oven). I had each carcass the size of a palm, I baked at 200 degrees, the mode "top-bottom" for about 20 minutes.

    Serve the finished fish hot with vegetables and fresh salads. Offer her all kinds of sauces if desired.
