Step 1:
How to make a meringue roll? Prepare everything you need for this. Separate the egg whites from the yolks. To do this, you will need about 6 eggs. As a berry filling of the roll, you can use any thick jam or fresh berries. I take blackcurrant jam. I like it because it gives sourness in a sweet filling.
Step 2:
Whisk the egg whites for a minute into a light foam. Then, without stopping whipping, gradually add powdered sugar.
Step 3:
Continue whipping the whites at maximum speed for another 4-5 minutes so that they are whipped to such a density that they hold their shape well on the corolla.
Step 4:
Add lemon juice and starch to the bowl with the whipped whites. Whisk everything again, but a little - 10-15 seconds. The meringue will remain as lush, but starch and lemon juice will interfere well with it.
Step 5:
Cover a baking tray (40 * 40 cm) with cooking paper and put all the whipped meringue.
Step 6:
Align over the entire surface. This will be the top of our roll. Place the baking sheet in the oven, preheated to 180 degrees for 20-25 minutes. Be guided by your oven.
Step 7:
The meringue should turn a slightly golden color. Pull the baking sheet out of the oven. Cover the meringue with another sheet.
Step 8:
Flip everything together. Then remove the sheet on which the meringue was baked.
Step 9:
While the meringue is cooling, prepare the cream. To do this, combine cream, 33% fat content, cottage cheese and powdered sugar. Very little powder is needed, since the meringue itself is very sweet. Whisk all the ingredients well until a thick, stable cream is obtained.
Step 10:
Set aside a couple of tablespoons of cream for decoration. Spread the rest of the cream evenly over the entire surface of the inverted meringue. Apply the berry filling.
Step 11:
Helping with the sheet on which the meringue lies, roll everything into a roll.
Step 12:
Decorate the top of the roll with a well-oiled cream.
Step 13:
The top of the roll can be decorated with any berries or fruits. Put the finished roll in the refrigerator so that the cream freezes a little.

In order for the protein to beat well, the eggs must be fresh, and the whipping dishes must be dry and clean, without traces of fat. When you separate the whites from the yolks, make sure that not a drop of yolk gets into the protein.
When whipping with a mixer, make sure that the entire volume of proteins is involved in the whipping process (the mixer must reach the bottom of the dishes), otherwise it may happen that the proteins remain liquid at the bottom.
