Cooking method
Turn on the oven at 200 degrees Celsius for preheating.
Rinse chicken breasts thoroughly under running water and dry with paper towels. Then remove the bone, if available, and make an incision with a sharp knife in the middle of the breast so that it becomes flatter and its area increases. Season the breasts with salt and freshly ground black pepper to taste.
Prepare the stuffing for the chicken. Rinse the greens well in cold water and spread them out on a paper towel to dry. As greens, you can take dill, parsley, green onions, basil, cilantro, spinach or any other at will. Then cut off the rough stems, and chop the rest finely. Cottage cheese is best to take fatter. It needs to be kneaded with a fork and mixed with herbs until smooth. If desired, you can add a little salt to the filling.
Next, you need to prepare breading for chicken breasts. To do this, mix breadcrumbs with grated parmesan in a deep dish. And in another container, beat the egg whites to a white foam.
Spread the chicken breasts seasoned with salt and pepper on a cutting board and spread the filling of cottage cheese and herbs on top. Then, taking hold of one edge, roll the meat into a tight roll.
Dip the resulting rolls first in the protein mixture, and then roll in a mixture of breadcrumbs with Parmesan.
Grease the baking dish with olive oil and put the chicken breasts rolled and rolled in breadcrumbs into it. Sprinkle the remaining olive oil on top of the chicken. And put the dish to bake in a preheated oven for about half an hour.
After the specified time, remove the baking dish from the oven, pour tomato sauce over the chicken breasts and put mozzarella pieces on each. Put the chicken meat back in the oven for 2-3 minutes so that the cheese melts on top.
