Step 1:
Pour yeast and 1 tablespoon of sugar into warm milk at a temperature of 40 degrees. Mix, leave in a warm place and wait for the appearance of the cap for about 10 minutes.
Step 2:
Pour in the melted butter, vegetable oil (leave 1 teaspoon to lubricate the mold) and pour in 1 tablespoon of sugar. Mix it up. If desired, at this stage, you can add vanilla or vanilla sugar for flavor.
Step 3:
Pour in the pre-sifted flour and a pinch of salt. We begin to knead with a silicone spatula or spoon.
Step 4:
When the mass thickens and begins to gather into a lump, we shift it to the table.
Step 5:
Knead a smooth and elastic dough, knead it for 5-8 minutes. We form a bun, put it in a bowl and cover it with a towel or cling film. We let them come up within 1 hour.

Divide it into 5 equal parts in a convenient way. We form the blanks in the form of balls and leave them for 10 minutes to rise.
Step 8:
At this time we are preparing the filling. The apple (I have a pear) is peeled and the core is removed. Cut the pulp into small cubes. Pour in the sugar and add lemon juice so that the apples do not darken. Mix it up. Another filling option that allows you to thicken the juice: mix apples with sugar and put them in butter (1 tbsp.l.) in a frying pan for 3 minutes while stirring, add a teaspoon of starch, mix and cool.
Step 9:
Take a piece of dough, knead it with your hands into a thick tortilla, spread a tablespoon of filling in the middle.
Step 10:
Tightly pinch the seam, forming a bun.
Step 11:
We do this with all the blanks that need to check the seams again so that apple juice does not leak through them (if the apples are raw). We spread them on a baking sheet seam down, covered with baking paper, which needs to be greased with vegetable oil. We give it 10 minutes to come up.
Step 12:
Lubricate the buns with beaten egg and milk - with milk, the baking surface will be more glossy.
Step 13:
Bake in the oven at 170 degrees for 20-25 minutes until browning.
