Stage 1. Preparation of sourdough.

Yeast, and for the preparation of the cake we will need fresh, we put it in a medium-sized container, pour granulated sugar to them and rub everything with a tablespoon. Next, pour the mixture with warm milk (not hot - the temperature of the milk should not be higher than 40 degrees). Mix everything and then add flour to this mixture (it must be pre-sifted).

Mix everything thoroughly with a fork or using a whisk, tighten the bowl with cling film or cover with a clean towel. We leave the bowl with the sourdough to stand for an hour in the kitchen (in a warm place). There should be no drafts at the same time. When the specified time has passed, the yeast will act - the sourdough will increase in volume and will be in bubbles.

Stage 2. Preparation of the dough.

Sift the flour into a large container, and then add the sourdough to it. Yolks, granulated sugar and a little salt are also sent there. Knead the dough. It should turn out pretty cool. We form a ball from the finished dough, put it on the bottom of the container, which we tighten with cling film on top or cover with a clean towel. Leave the dough in a warm place for 30 minutes.

After this time, pour water into the container with the dough, it should be a little warm. We knead everything thoroughly again. Next, add the softened butter and knead everything well again. The dough turns out to be very soft, pliable, homogeneous. We form the ball again and put it in a warm place, but now for 2 hours. During this time, the dough should increase in volume several times.

Remove the dough and spread it on the work surface. We fold it several times overlap (stretch, and then fold). We do this 3-4 times. After forming the ball again, we put it in a bowl under the film and in a warm place for 3 hours. It should increase in size several times again.

3. Preparing the filling.

Food poppy is poured into the bowl of a blender, add granulated sugar. Grind, then add the proteins and grind again.

4. We form and bake cakes.

We divide the dough that has come up into 4 portions, each one is stretched into a rectangular layer. We smear the layer with poppy seed filling, distributing it evenly over four future cakes. Next, we roll the layers into rolls, fold them in half (like a rainbow) and place them in baking molds with the folds up. The forms should only be filled in by 1 third. We leave the dough in the molds in a warm place for 1.5 hours.

Turn on the oven to warm up to 200 degrees Celsius. Future cakes are smeared with a slightly beaten egg with a fork and put in the oven for half an hour. We check the readiness of the cakes with a "dry match" test. Stick a match or a wooden skewer. If the stick remains dry when pulling out of the dough, the cake is ready.

We cool the ready-made cakes. And then you can decorate them to your taste.
