Step-by-step cooking
Step 1:
Prepare the specified ingredients. My kefir is thick, 3.2% fat content, but it seems to me that any one will do. Eggs C1, if small, it is better to use three pieces. Apples to taste, but it is better to take not very sweet. Lemon juice is needed from lemon to sprinkle the apples (so that they do not darken). Pre-sift the flour. Prepare a baking dish, any one will do.
Step 2:
In a deep bowl, break the eggs one by one, add the right amount of sugar. Beat the eggs with sugar until the sugar dissolves and a white foam forms on the surface.
Step 3:
Add sour cream, kefir to the egg-sugar mixture and mix. Add the sifted flour, baking soda, a pinch of salt and vanilla. Mix everything thoroughly and push the bowl aside. The mass should be homogeneous, without lumps, similar in consistency to thick sour cream. The dough should stand for a few minutes (10 - 15). Turn on the oven to warm up to 180 degrees.
Step 4:
Choose apples for the pie according to your taste. If apples are very sour, then you can increase the amount of sugar by 20-30 grams, if sweet, on the contrary, reduce. Adding apples to a pie with or without skin is also guided by your taste. I have seasonal apples with a thick skin, so I cut off the skin. Peel and cut the washed apples into cubes, sprinkle with lemon juice.
Step 5:
Add vegetable oil to the dough and mix thoroughly. Vegetable oil should be taken with a neutral smell or completely odorless.
Step 6:
Lubricate the selected cake pan with vegetable or butter. Pour half of the dough into the mold. Add the sliced apples, evenly distributing them throughout the mold.
Step 7:
Pour in the remaining dough. Put the form with charlotte in a preheated 180 degree oven for 35-40 minutes (the time will depend on the power of the oven). Check the readiness of the pie with a wooden skewer - it should come out dry from the middle of the pie.
Step 8:
Take the finished charlotte out of the oven, let it stand in the form. Carefully remove the pie from the mold. Cut into portions and can be served with tea, a glass of milk or coffee.
Charlotte according to this recipe turned out delicious, fragrant. But for me, the dough in the finished pie seemed a little rubbery, heavy, and there are much more steps in cooking than in the classic charlotte recipe. Therefore, in choosing a recipe for charlotte, I will remain conservative and will cook according to a recipe where the main ingredients are eggs, flour and sugar.
